Saint Peter

Sydney, Australia

Saint Peter is a seafood restaurant in the Paddington neighbourhood of Sydney, Australia, about a decade old. It is run by chef-owners Josh and Julie Niland.

Food & Wine ranks Saint Peter No. 10 in its Global Tastemakers 2026 list of the best global restaurants. The magazine says it is hard to discuss Australian seafood without mentioning Saint Peter, and praises the Nilands for using nearly every part of the fish.

Tasting menus feature regional catch such as nannygai, a redfish from Western Australian waters. Yellowfin tuna bone marrow becomes fudge, coral trout bones are ground into a binder for noodle and pasta doughs, and nannygai eyes go into ice creams and custards. Each menu item names where the seafood came from and who caught or gathered it.
