CieL Dining

Ho Chi Minh City, Vietnam

CieL Dining is a restaurant in Ho Chi Minh City, Vietnam, opened in early 2024 by chef Việt Hồng in his home town. It serves dinner-only tasting menus in a small purpose-built villa in the quiet Thao Dien area.

Food & Wine ranks CieL Dining No. 3 in its Global Tastemakers 2026 list of the best global restaurants. The magazine notes that it earned its first Michelin star little more than a year after opening, and praises how the chef, trained in France, turns simple market produce into refined dishes.

Examples given include Chinese broccoli with foie gras, and ambarella fruit with a house-made muối tôm seasoning salt. Most of the cooking draws on Vietnam and its neighbours, from Huế-style fermented tofu and dry-aged Vietnamese mallard to a signature dish of fish maw served in custard. French touches appear in a squab with miso hollandaise, and the wine list, overseen by co-owner Thanh Liêm, includes plenty of natural wine.
