Naar
Darwa, India
Naar is a 16-seat restaurant in the village of Darwa in the northern Indian state of Himachal Pradesh, opened in 2023 by chef Prateek Sadhu. It sits within Amaya, an eco-resort and working farm surrounded by 20 acres of hills.
Food & Wine ranks Naar No. 6 in its Global Tastemakers 2026 list of the best global restaurants. The magazine highlights a kitchen built on the Himalayan roots of Sadhu, who was born in Baramulla in Kashmir, and on what he defines as the region's six seasons.
Sadhu opened Naar six years after co-founding the acclaimed Masque in Mumbai, which he left to return to the mountains. Produce comes from local smallholders or is grown, foraged and fished on site, including yak cheese, river trout, mountain mushrooms, buckwheat and galgal lemons. Alongside more conceptual dishes, the menu serves mountain specialities such as sunderkala wheat noodles from Uttarakhand and iklu, a Himachali fried bread with ghee and jaggery.
