Maido
Lima, Peru

Maido is a Nikkei restaurant in the Miraflores district of Lima, Peru, opened in October 2009. It is owned and led by chef Mitsuharu "Micha" Tsumura, whose cooking blends Peruvian and Japanese traditions.
The World's 50 Best Restaurants 2025 ranks Maido No. 1, and Food & Wine places it No. 2 in its Global Tastemakers 2026 list of the best global restaurants. Food & Wine praises Tsumura's personal take on Nikkei cuisine, built on forms such as ceviche, tiradito and nigiri that showcase ingredients from across Peru. It cites Andean produce such as huacatay, lucuma and tumbo, and tubers like olluco and mashua.
Tsumura trained at Johnson & Wales University in the United States and cooked in Japan for several years before opening Maido. Wikipedia notes a slow start, with about 30 dishes sold a day, before a tour of Peru linked to the Mistura food fair changed his approach. Dishes mentioned include sushi a lo pobre, a beef nigiri topped with quail egg, and a short rib braised for 50 hours. Before topping the 2025 list, Maido placed in every edition of the World's 50 Best ranking since 2015, rising to No. 5 in 2024. As of 2024 it seated 52 guests over two floors.
