Schwarzwaldstube

Baiersbronn, Germany

Schwarzwaldstube, "Black Forest Parlour" in English, is a restaurant in the Traube Tonbach Hotel in Baiersbronn, Germany. It has held three Michelin stars since 1993, the longest such run of any restaurant in Germany.

La Liste places it at No. 1 in its Top 1000 for 2026 with a score of 99.5 points. That top score is shared by ten restaurants, so the No. 1 is a joint first place in a ranking that covers more than 1,000 establishments in 77 countries. Wikipedia notes that it already scored 99.5 in La Liste's 2024 ranking, and that the German portal Restaurant-Ranglisten rates it first in Germany.

The restaurant opened in 1977 with Wolfgang Staudenmaier as head chef and Heiner Finkbeiner as restaurant manager, and soon earned two stars. Harald Wohlfahrt took over the kitchen in 1980 and won the third star; Torsten Michel succeeded him in 2017. In January 2020 a fire destroyed the original building, and the team cooked in a temporary space called "Temporaire" from May 2021. The rebuilt Schwarzwaldstube reopened on 8 April 2022 and regained three stars that year.
