Alchemist is a restaurant in Copenhagen, Denmark, founded and run by chef Rasmus Munk, with two Michelin stars. Its current home, opened in 2019, is a 2,200-square-metre space in the former scenery workshop of the Royal Danish Theatre in Refshaleøen.

The World's 50 Best Restaurants 2025 ranks Alchemist No. 5, up from No. 8 in 2024 according to Wikipedia. Wikipedia also cites The New Yorker calling it one of fine dining's most sought-after reservations, and Opinionated About Dining voting it the best restaurant in Europe.

Munk first opened a 15-seat Alchemist in 2015; a lamb heart tartare served with a card promoting organ donation reportedly led to 1,500 new donor registrations. The present restaurant's main dining room is a planetarium-style dome, and a meal of up to 50 "impressions" lasts four to six hours. Dishes address themes such as food waste, animal welfare and health; since 2020 nearly 13,000 guests have scanned a blood donation QR code after dishes like "Lifeline". The new building cost more than four times its 20-million-kroner budget, and the restaurant operates near break-even.
