Martín Berasategui

Lasarte, Spain

Martín Berasategui is the restaurant of Spanish chef Martín Berasategui, a specialist in Basque cuisine, in Lasarte-Oria, near San Sebastián, Spain. He opened it in 1993, and it has held three Michelin stars since the 2001 guide.

La Liste places it at No. 1 in its Top 1000 for 2026 with a score of 99.5 points. That top score is shared by ten restaurants, so the No. 1 is a joint first place in a ranking that covers more than 1,000 establishments in 77 countries. It shares that score with, among others, Guy Savoy in Paris and Schwarzwaldstube in Baiersbronn.

Berasategui began working in his parents' restaurant, Bodegón Alejandro, at 14, trained in France as a pastry chef and took over the family business at 20. Wikipedia records that he holds eleven Michelin stars in total as of 2026, more than any other Spanish chef, across restaurants including Lasarte in Barcelona and Fifty Seconds in Lisbon. The Lasarte-Oria restaurant reached No. 29 in Restaurant magazine's world list in 2008 and 2011, its highest placing there.
