Ginza Inaba
Tokyo
Ginza Inaba is a Japanese restaurant in Tokyo, led by chef Masanobu Inaba. It serves an omakase menu in an interior modelled on a traditional Japanese house, with heavy stepping stones and white plaster walls.
Food & Wine ranks Ginza Inaba No. 6 in its Global Tastemakers 2025 list of the top 15 international restaurants. The magazine praises a reimagining of Japanese cuisine in which dishes, tableware and the timing of courses are designed to engage all the senses.
Inaba follows the philosophy of yuuzu-muge, which Food & Wine translates as "flexible and unimpeded". The menu brings out the natural flavours and textures of its ingredients, with steam rising from an okudosan stove and freshly cooked rice. Dishes mentioned include sardine with asparagus, fresh tofu and a light dashimaki tamago, a rolled omelette with dashi.
